Ingredients:
1 1/2 pounds boneless, skinless chicken breasts or thighs
4 cups frozen corn kernels
3 medium potatoes, peeled and diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream or half-and-half
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and pepper, to taste
2 tablespoons butter
Fresh parsley, chopped (for garnish)
Directions:
Place chicken, corn, potatoes, onion, garlic, chicken broth, thyme, smoked paprika, salt, and pepper into the slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken and potatoes are tender.
Remove chicken from the slow cooker, shred with two forks, and return to the pot.
Stir in butter and heavy cream, heating through but not boiling. Adjust seasoning as needed.
Serve hot, garnished with fresh parsley.
