This fragrant and ultra‑creamy Thai coconut curry dumpling soup comes together in just about 15 minutes, making it perfect for a quick and comforting meal. Frozen dumplings or potstickers are gently cooked in a spiced coconut milk broth infused with red curry paste, garlic, ginger, fish sauce, lime juice, and soy sauce. Easily customizable with optional veggies like bok choy, spinach, or shredded carrots, it delivers bold Thai flavor with minimal prep—ideal for busy weeknights, light dinners, or when you want something cozy and satisfying without the fuss.
• 20 frozen gyozas or potstickers (any filling you like)
• 1 Tbsp vegetable oil
• 4 cloves garlic, grated or minced
• 1 tsp grated fresh ginger
• 4 cups chicken or vegetable broth
• 1 can (14 oz / 400 ml) full‑fat coconut milk
• 1 Tbsp low‑sodium soy sauce
• 1 Tbsp fish sauce
• 1 tsp toasted sesame oil
• 3 Tbsp Thai red curry paste (adjust for spice)
• 1 tsp brown sugar
• 2 Tbsp fresh lime juice (or lemon)
• Optional veggies for serving: spinach, bok choy, shredded carrots, snap peas
• Chopped chives, cilantro or lime wedges for garnish
Heat oil over medium heat in a saucepan. Add garlic and ginger; sauté for about 30 seconds until fragrant.
Pour in broth and coconut milk. Stir in soy sauce, fish sauce, sesame oil, brown sugar, curry paste, and lime juice until curry paste is dissolved. Bring to a simmer and cook for about 5 minutes.
Meanwhile, cook dumplings per package directions in boiling water (usually 2–3 minutes) until heated through. Drain.
Divide the cooked dumplings among bowls and ladle the hot coconut curry broth over them. Add optional veggies if desired.
Garnish with chopped chives, cilantro, chili flakes, or a squeeze of lime. Serve immediately.
