For the Main Course:
2 packs udon noodles
200g fresh beef (ribeye or flank steak), thinly sliced
1 clove garlic, minced
Chinese cabbage or any leafy green, chopped
1 white onion, sliced
Salt to taste
Sugar to taste
For the Marinade:
1 clove garlic, minced
1 tsp sesame oil
1 tbsp soy sauce
1 tsp oyster sauce
1 tsp Chinese white vinegar
1 tsp cornstarch or potato starch mixed with water (slurry)
For the Black Pepper Sauce:
3 tbsp dark soy sauce
2 tbsp oyster sauce
1 tbsp rice vinegar
1 tbsp sugar
1 tbsp freshly ground black pepper
Marinate the Beef: In a bowl, combine all marinade ingredients. Add the thinly sliced beef and mix well. Let it marinate for at least 10 minutes to absorb the flavors.
Prepare the Noodles: Cook the udon noodles according to the package instructions. Drain and set aside.
Prepare the Sauce: In a separate bowl, mix all the black pepper sauce ingredients until the sugar dissolves. Set aside.
Stir-Fry the Beef: Heat a pan over medium-high heat. Add the marinated beef and stir-fry until it's 60% cooked. Remove the beef from the pan and set aside.
Cook the Vegetables: In the same pan, add a bit more oil if needed. Sauté the minced garlic, sliced onion, and chopped Chinese cabbage until the vegetables are tender.
Combine Everything: Add the cooked udon noodles to the pan with the vegetables. Pour in the black pepper sauce and toss everything together until the noodles are well-coated.
Finish the Dish: Return the partially cooked beef to the pan and stir-fry for another minute until the beef is fully cooked and everything is well-mixed.
Serve: Taste and adjust seasoning with salt and sugar as desired. Serve hot and enjoy your flavorful black pepper beef udon!
