1 pound lean ground beef (90% lean)
1 packet taco seasoning (or homemade)
¾ cup red enchilada sauce
2½ cups Oaxaca cheese or Monterey Jack cheese, shredded
10 corn tortillas
1 tablespoon olive oil
Preheat the Oven: Preheat your oven to 450°F (232°C).
Cook the Ground Beef: In a skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Drain any excess fat. Stir in the taco seasoning and red enchilada sauce. Simmer for a few minutes, then remove from heat.
Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30–60 seconds until pliable. Brush one side of each tortilla with olive oil.
Assemble the Tacos: Place the oiled side down on a baking sheet. Add 2 tablespoons of shredded cheese to half of each tortilla, top with ¼ cup of the seasoned beef mixture, then add 2 more tablespoons of cheese on top. Fold the tortilla over the filling.
Bake: Arrange the assembled tacos in a single layer on the baking sheet. Bake for 16 minutes, or until the tortillas are golden and crispy, and the cheese is melted.
Serve: Allow the tacos to cool for a few minutes before serving. Enjoy with your favorite toppings such as salsa, guacamole, or sour cream.
