2 tablespoons butter
2 medium onions, thinly sliced
1 teaspoon sugar
2 cloves garlic, minced
1 ½ pounds ground beef
1 egg
½ cup breadcrumbs
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
½ cup shredded mozzarella or Swiss cheese
½ teaspoon salt
½ teaspoon black pepper
For the Glaze:
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
½ cup shredded mozzarella or Swiss cheese (for topping)
Preheat oven to 375°F (190°C).
In a skillet, melt butter over medium heat. Add sliced onions and sugar. Cook for 15–20 minutes, stirring often, until caramelized. Add garlic in the last minute, then remove from heat and let cool slightly.
In a large bowl, combine ground beef, egg, breadcrumbs, Worcestershire sauce, mustard, salt, pepper, cheese, and most of the caramelized onions (reserve a little for topping). Mix until just combined.
Shape mixture into a loaf and place in a greased loaf pan or on a lined baking sheet.
In a small bowl, mix ketchup and Worcestershire sauce to make the glaze. Spread over the top of the meatloaf.
Bake for 45–50 minutes. In the last 5 minutes, sprinkle remaining onions and cheese on top and return to oven until melted and bubbly.
Let rest for 5–10 minutes before slicing and serving.
