This salad combines tender pasta with classic Mediterranean ingredients like cucumbers, tomatoes, olives, feta cheese, and a tangy lemon-oregano dressing. Ingredients:
12 ounces pasta (penne, rotini, or your choice)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
For the Dressing:
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano
1 clove garlic, minced
Salt and pepper, to taste
Directions:
Cook pasta according to package instructions until al dente. Drain, rinse under cold water, and drain again.
In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper until well combined.
Pour dressing over the pasta salad and toss gently to coat all ingredients evenly.
Refrigerate for at least 1 hour before serving to allow flavors to meld.
