Ingredients:
8 ounces fettuccine or your favorite pasta
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
In the same skillet, add minced garlic and sun-dried tomatoes; sauté for 1-2 minutes until fragrant.
Pour in heavy cream, then stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer gently until the sauce thickens, about 3-5 minutes.
Return shrimp to the skillet and toss to coat in the sauce. Add cooked pasta and toss until well combined and heated through.
Garnish with fresh parsley before serving.
