1 pound boneless, skinless chicken breasts
¾ cup extra virgin olive oil
⅓ cup balsamic vinegar
4 cloves garlic, minced
1 teaspoon dried basil
Kosher salt and freshly ground black pepper, to taste
1 pound spiral pasta (or your preferred cut, like penne, etc.)
12 to 16 ounces grape or cherry tomatoes, cut in half
8 ounces fresh mozzarella (ciliegine), balls cut in half if you wish
1 large handful fresh basil, about ⅔ cup basil leaves, chopped or chiffonade
Marinate the Chicken: In a resealable bag or shallow dish, combine olive oil, balsamic vinegar, minced garlic, dried basil, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Seal and refrigerate for at least 30 minutes, preferably overnight.
Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5–10 minutes before slicing into bite-sized pieces.
Cook the Pasta: While the chicken is grilling, cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Assemble the Salad: In a large bowl, combine the cooked pasta, grilled chicken pieces, halved tomatoes, halved mozzarella, and chopped basil.
Dress and Serve: Drizzle the salad with the reserved balsamic vinaigrette dressing. Toss gently to combine. Serve immediately, or refrigerate for up to 2 hours before serving. If preparing ahead, add fresh basil just before serving to maintain its vibrant color.
