Ingredients:
1 (12 to 14 pounds) whole turkey, thawed if frozen
1/2 cup unsalted butter, softened
1 tablespoon salt
1 teaspoon black pepper
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 teaspoon garlic powder
1 large onion, quartered
1 lemon, halved
4 cloves garlic, peeled and smashed
Fresh herbs (rosemary, thyme, sage), optional
2 cups low-sodium chicken broth or turkey stock
Directions:
Preheat oven to 325°F (163°C). Remove the turkey giblets and pat the turkey dry with paper towels.
In a small bowl, mix softened butter with salt, pepper, thyme, rosemary, and garlic powder.
Gently loosen the skin of the turkey breast and thighs, and spread half of the butter mixture underneath the skin. Spread the remaining butter evenly over the outside of the turkey.
Stuff the turkey cavity with onion, lemon, garlic cloves, and fresh herbs if using.
Place the turkey breast side up on a rack in a roasting pan. Pour chicken broth into the pan to keep the bird moist during roasting.
