Ingredients:
For the Meatloaf:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
For the Loaded Potato Topping:
3 large potatoes, peeled and cubed
1/2 cup shredded cheddar cheese
1/4 cup sour cream
3 tablespoons butter
1/4 cup milk
Salt and pepper to taste
Optional: cooked bacon bits and chopped green onions for garnish
Directions:
Preheat oven to 350°F (175°C).
Boil the cubed potatoes in a large pot until tender, about 15 minutes. Drain well.
Mash the potatoes with butter, sour cream, milk, salt, and pepper until creamy. Stir in shredded cheddar cheese. Set aside.
In a large bowl, mix ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and thyme until just combined.
Place the meat mixture into a greased loaf pan and shape into a loaf.
Spread the cheesy mashed potato mixture evenly over the meatloaf.
