Ingredients:
4 boneless, skinless chicken breasts
1 cup mushrooms, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup shredded mozzarella cheese (optional)
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper, to taste
Toothpicks or kitchen twine for securing
Directions:
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent. Add mushrooms and thyme, cooking until mushrooms release moisture and it evaporates, about 5-7 minutes. Season with salt and pepper and remove from heat.
Using a sharp knife, carefully cut a pocket into each chicken breast without cutting all the way through.
Stuff each chicken breast with the mushroom mixture and mozzarella cheese, if using. Secure with toothpicks or kitchen twine.
Place stuffed chicken breasts in a baking dish and season the outside with salt and pepper.
Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
Remove toothpicks before serving.
