Whether you're looking to impress someone special or simply indulge in a decadent homemade treat, this cake is sure to win hearts. Its unique texture, reminiscent of flan, combined with the tropical sweetness of coconut, makes it a standout dessert for any occasion.
For the Cake:
1 can (14 oz) sweetened condensed milk
1 can (13.5 oz) coconut milk
1 cup whole milk
4 large eggs
1 cup all-purpose flour
1 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 tablespoon baking powder
For the Topping:
1 cup coconut milk
½ cup sweetened condensed milk
½ cup shredded coconut
Preheat the Oven: Set your oven to 350°F (175°C). Grease a bundt pan or a deep cake pan with butter and lightly dust it with flour to prevent sticking.
Blend the Cake Ingredients: In a blender, combine the sweetened condensed milk, coconut milk, whole milk, eggs, all-purpose flour, sugar, melted butter, vanilla extract, and baking powder. Blend until the mixture is smooth and well combined.
Bake the Cake: Pour the batter into the prepared pan. Bake for 30 to 60 minutes, depending on your oven, or until a toothpick inserted into the center comes out clean.
Prepare the Topping: While the cake is baking, in a saucepan, combine the coconut milk, sweetened condensed milk, and shredded coconut. Cook over medium heat, stirring continuously, until the mixture thickens slightly. Remove from heat and let it cool slightly.
Assemble the Cake: Once the cake is done, remove it from the oven and let it cool for a few minutes. Poke small holes all over the surface of the warm cake using a fork or skewer. Pour the warm topping mixture evenly over the cake, allowing it to soak in.
Cool and Serve: Let the cake cool to room temperature, then chill in the refrigerator for at least 1 hour before serving.
