For the Crust:
1½ cups raw pistachios
3 tablespoons sugar
½ teaspoon kosher salt
6 whole graham crackers
8 tablespoons (1 stick) unsalted butter, melted
For the Filling:
12 ounces bittersweet chocolate, chopped
1½ cups heavy cream
¾ teaspoon pure vanilla extract
⅛ teaspoon kosher salt
½ cup dried apricots, chopped (optional)
Lightly whipped cream, for serving (optional)
For Garnish:
Finely chopped pistachios
Prepare the Crust: Preheat the oven to 350°F (175°C). Spray a 9-inch springform pan with nonstick cooking spray. In a food processor, pulse the pistachios, sugar, and salt until finely chopped. Add the graham crackers and pulse until the mixture resembles wet sand. Add the melted butter and pulse until combined. Press the mixture evenly into the bottom of the prepared pan. Bake until golden brown around the edges, about 12 minutes. Cool to room temperature.
Prepare the Filling: Place the chopped chocolate in a medium bowl. In a small saucepan over medium heat, bring the cream, vanilla, and salt to a simmer. Pour the hot cream mixture over the chocolate and let sit for 2 minutes. Whisk until smooth and shiny. Pour the chocolate filling over the cooled crust. Sprinkle with chopped apricots, if using. Refrigerate until set, at least 4 hours or overnight.
Serve: Before serving, garnish the tart with finely chopped pistachios. Slice and serve with lightly whipped cream, if desired.
