Ingredients:
4 salmon fillets (skin-on or skinless)
2 tablespoons olive oil
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth
1/2 teaspoon crushed red pepper flakes (optional)
1 tablespoon lemon juice
Salt and pepper, to taste
1 tablespoon fresh basil, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt and pepper on both sides.
Add the salmon fillets to the skillet, skin-side down (if using skin-on), and cook for 4-5 minutes per side until golden and cooked through. Remove the salmon from the skillet and set aside.
In the same skillet, add chopped sun-dried tomatoes and minced garlic. Cook for 1-2 minutes until fragrant.
Stir in heavy cream, chicken broth, and red pepper flakes (if using). Bring to a simmer and cook for 3-4 minutes until the sauce thickens slightly.
Add lemon juice and stir to combine.
Return the salmon to the skillet and spoon the sauce over the fillets.
Cook for another 2-3 minutes to heat the salmon through.
Garnish with fresh basil and serve immediately.
