2 lb (900 g) salmon fillets, skin-on, deboned
¼ cup sake
¼ cup mirin
⅓ cup white miso paste
⅓ cup cane sugar
Prepare the Marinade: In a saucepan over medium heat, combine the sake and mirin. Bring to a simmer and cook for about 3 minutes to allow the alcohol to evaporate.
Add Miso and Sugar: Stir in the miso paste and cane sugar. Continue to cook for an additional 2 minutes, ensuring the mixture is smooth and the sugar has dissolved. Remove from heat and let it cool.
