Greek Moussaka
Greek Moussaka is a classic Mediterranean casserole that layers tender eggplant, savory ground meat, and a rich, creamy béchamel sauce. Ingredients:
For the Meat Sauce:
1 pound ground beef or lamb
1 onion, finely chopped
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
Salt and pepper, to taste
2 tablespoons olive oil
For the Eggplant:
2 large eggplants, sliced into 1/4-inch thick rounds
Salt
Olive oil, for brushing
For the Béchamel Sauce:
4 tablespoons butter
1/4 cup all-purpose flour
2 cups milk, warmed
1/4 teaspoon ground nutmeg
2 eggs, beaten
Salt and pepper, to taste
Directions:
Preheat oven to 375°F (190°C).
Sprinkle eggplant slices with salt and let sit for 20 minutes to draw out moisture. Pat dry. Brush both sides with olive oil and bake for 20 minutes or until softened and lightly browned.
In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened. Add ground meat and cook until browned.
Stir in crushed tomatoes, tomato paste, oregano, cinnamon, salt, and pepper. Simmer for 15 minutes.
To make the béchamel, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually whisk in warm milk and cook until thickened. Remove from heat and whisk in nutmeg, salt, pepper, and beaten eggs.
In a baking dish, layer half of the eggplant slices, then spread the meat sauce evenly over them. Add the remaining eggplant slices on top.
Pour béchamel sauce over the top layer, spreading evenly.
Bake for 45-50 minutes, or until the top is golden and bubbly.
Allow to cool for 10-15 minutes before serving.
