Ingredients:
12 ounces pasta (penne, rigatoni, or your choice)
1 pound large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 cup dry white wine or chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
2 tablespoons fresh parsley, chopped
Salt and pepper, to taste
Olive oil for cooking
Directions:
Preheat oven to 375°F (190°C). Cook pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil and 2 tablespoons butter over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
Pour white wine or chicken broth into the skillet and simmer for 2 minutes to reduce slightly.
Stir in heavy cream and 1/2 cup Parmesan cheese; cook until the sauce thickens slightly, about 3-5 minutes.
Add cooked pasta and shrimp to the sauce, stirring gently to combine.
Transfer the mixture to a greased baking dish. Sprinkle with mozzarella and remaining Parmesan cheese.
Bake for 15-20 minutes until the cheese is melted and bubbly, and the top is golden brown.
Garnish with chopped parsley and serve hot.
