Ingredients:
1 1/2 pounds ground beef
1/2 cup breadcrumbs
1 small onion, finely chopped
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
2 cups sliced mushrooms
1/2 cup beef broth
2 tablespoons all-purpose flour
2 tablespoons butter
3 cups shredded cheddar cheese
3 cups frozen hashbrowns, thawed
1/2 cup chopped green onions (optional)
Directions:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, salt, and pepper. Mix gently until combined. Form into small patties and set aside.
In a skillet over medium heat, melt butter and sauté mushrooms until tender. Sprinkle flour over the mushrooms and stir to coat. Gradually add beef broth, stirring constantly, and cook until the gravy thickens.
Place the beef patties in the prepared baking dish. Pour the mushroom gravy evenly over the patties.
Spread the thawed hashbrowns evenly over the top of the gravy and patties. Sprinkle shredded cheddar cheese over the hashbrowns.
Bake for 40-45 minutes, or until the cheese is melted and bubbly and the beef is cooked through.
Garnish with chopped green onions if desired before serving.
