Bread:
3–4 ripe bananas
2 tablespoons brown sugar
1½ teaspoons vanilla extract
¾ teaspoon ground cinnamon
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
2 tablespoons sour cream or Greek yogurt
Crumb Topping:
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup packed brown sugar
6 tablespoons cold unsalted butter
Directions:
Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans.
Make the Crumb Topping: In a medium bowl, combine the cinnamon, flour, and brown sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Set aside.
Prepare the Banana Bread Batter: In a small bowl, mash the bananas with the brown sugar, vanilla extract, and ground cinnamon.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a separate bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the sour cream or Greek yogurt and the mashed banana mixture.
