Ingredients:
1 1/2 pounds boneless, skinless chicken breasts or thighs
4 large carrots, sliced
3 celery stalks, sliced
1 medium onion, chopped
3 cloves garlic, minced
8 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper, to taste
8 ounces egg noodles
Fresh parsley, chopped (for garnish)
Directions:
Place chicken, carrots, celery, onion, garlic, chicken broth, thyme, parsley, salt, and pepper into the crockpot.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender.
Remove chicken and shred with two forks; return shredded chicken to the crockpot.
Add egg noodles to the crockpot and cook on high for an additional 20-30 minutes, or until noodles are tender.
Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.
