1 lb (450 g) lean ground beef
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup (200 g) uncooked orzo pasta
1 (14.5 oz/410 g) can diced tomatoes, undrained
1½ cups (360 ml) beef broth
2 cups (60 g) fresh spinach, packed
1 tsp Italian seasoning
Salt and pepper, to taste
Optional: Freshly grated Parmesan cheese, for serving
Sauté Aromatics: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spoon, until browned and cooked through, about 6–8 minutes. Drain any excess fat.
Add Vegetables: To the skillet, add the chopped onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Combine Ingredients: Add the uncooked orzo pasta, diced tomatoes with their juices, beef broth, Italian seasoning, salt, and pepper to the skillet. Stir to combine.
