Ingredients:
6 large eggs
1/4 cup milk
1 cup fresh spinach, chopped
1/2 cup bell pepper, diced (any color)
1/2 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or butter for greasing
Directions:
Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or butter.
In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
