Ingredients:
1 lb boneless, skinless chicken breasts, cut into strips
2 tablespoons Cajun seasoning
8 oz penne or fettuccine pasta
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup sliced mushrooms
2 cups fresh spinach
1½ cups heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley (optional, for garnish)
Directions:
Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain, reserving ½ cup of pasta water, and set aside.
While the pasta cooks, season the chicken strips with Cajun seasoning.
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5–7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the sliced mushrooms to the skillet and cook until softened, about 3–4 minutes.
Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.

Add the cooked pasta and chicken to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
