1 cup macaroni noodles
2 tbsp unsalted butter
2 tbsp all-purpose flour
½ cup milk
1½ cups shredded cheddar cheese (divided)
Cook macaroni according to package directions; set aside to cool.
In a saucepan, melt butter over medium heat. Stir in flour and simmer for about 1 minute.
Gradually whisk in milk and simmer a few minutes until bubbly and thickened.
Remove from heat and stir in 1 cup of shredded cheddar until melted.
Add cooked macaroni and mix until noodles are coated. Let mixture cool or refrigerate (chill overnight if preferred).
Preheat oven to 375 °F and spray a mini muffin pan with non-stick cooking spray.
Scoop about 1 tablespoon of mac mixture into each cup, top with remaining shredded cheddar to cover.
