Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
For the Cheesecake Filling:
24 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
For the Strawberry Crunch Topping:
1 ½ cups fresh strawberries, sliced
½ cup granulated sugar
1 tablespoon cornstarch
1 cup crushed graham crackers
½ cup chopped nuts (optional)
Directions:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.
In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully incorporated.
Pour cheesecake filling over the crust in the pan.
Bake for 50-60 minutes or until the center is almost set but still slightly jiggly. Remove from oven and allow to cool to room temperature. Refrigerate for at least 4 hours or overnight.

Spread the strawberry mixture evenly over the chilled cheesecake. Sprinkle crushed graham crackers and chopped nuts over the top to add crunch.
Refrigerate for an additional 30 minutes before serving.
