This hearty beef stew is packed with tender chunks of beef, vegetables, and a rich, flavorful broth. Made quickly in the Instant Pot, it’s perfect for a comforting meal on busy days. The pressure cooker tenderizes the beef and infuses the stew with deep, savory flavors in a fraction of the time it usually takes.
Ingredients
2 pounds beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
3 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
3 large carrots, peeled and sliced
3 large potatoes, peeled and cubed
2 stalks celery, sliced
Salt and freshly ground black pepper, to taste
2 tablespoons cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening)
Directions
Set the Instant Pot to “Sauté” mode and heat the vegetable oil.
Add the beef cubes in batches and brown on all sides, about 5 minutes per batch. Remove and set aside.
Add the onion to the pot and sauté until softened, about 3 minutes. Add garlic and cook for another minute.
Stir in the tomato paste and cook for 1 minute.
Pour in the beef broth and deglaze the pot by scraping the bottom to remove any browned bits.
Return the beef to the pot, then add Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir to combine.
Lock the lid and set the Instant Pot to “Manual” or “Pressure Cook” on high for 35 minutes.
When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
Open the lid and add the carrots, potatoes, and celery. Lock the lid again and cook on high pressure for an additional 5 minutes.
Perform a quick release once the cooking is done.
(Optional) If you want a thicker stew, mix cornstarch and water in a small bowl to create a slurry. Set the Instant Pot to “Sauté” mode and stir in the slurry. Cook until the stew thickens, about 2-3 minutes.
Taste and adjust seasonings as needed. Serve hot.
