3 cups chilled mashed potatoes
1 cup shredded cheddar cheese
1/4 cup all-purpose flour
2 tablespoons grated Parmesan cheese
2 tablespoons fresh chives, finely chopped
1/3 cup sour cream
Salt, to taste
2 large eggs, beat
Preheat the Oven: Set your oven to 400°F (200°C). Lightly grease a mini muffin tin to prevent sticking.
Prepare the Mixture: In a large bowl, whisk together the eggs and sour cream until smooth. Stir in the shredded cheddar cheese, grated Parmesan, and chopped chives. Season with salt to taste
Combine with Mashed Potatoes: Gently fold the chilled mashed potatoes into the egg mixture until well combined. Be careful not to overmix to maintain a light texture.
Fill the Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Bake: Place the tin in the preheated oven and bake for 20–25 minutes, or until the tops are golden brown and the puffs are set.
Cool and Serve: Allow the puffs to cool slightly before removing them from the tin. Serve warm for the best flavor and texture.
