Bruschetta Pasta Salad is a fresh and vibrant dish inspired by the classic Italian appetizer. Combining al dente pasta with juicy tomatoes, fragrant basil, garlic, and a zesty olive oil dressing, this salad bursts with Mediterranean flavors. Ingredients:
8 ounces pasta (such as rotini or penne)
2 cups cherry tomatoes, halved
1/2 cup fresh basil leaves, chopped
3 cloves garlic, minced
1/4 cup red onion, finely diced
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (optional)
Directions:
Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large bowl, combine cherry tomatoes, basil, garlic, and red onion.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Add the cooked pasta to the bowl with vegetables and pour the dressing over it. Toss gently to combine.
Sprinkle with grated Parmesan cheese if desired.
Refrigerate for at least 30 minutes before serving to allow flavors to meld.
