This Caprese Pasta Salad with Balsamic Glaze is a vibrant and refreshing dish that combines the classic flavors of a Caprese salad with the heartiness of pasta. Perfect for summer gatherings, picnics, or as a light meal, this salad is quick to prepare and bursting with fresh ingredients.
Ingredients:
For the Salad:
12 oz short pasta (such as rotini, penne, or bowtie)
1½ cups cherry tomatoes, halved
8 oz fresh mozzarella, diced or use mozzarella balls
½ cup fresh basil, chopped or torn
2 tbsp extra virgin olive oil
Salt and black pepper, to taste
For the Balsamic Glaze:
½ cup balsamic vinegar
1 tbsp honey or brown sugar
Directions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Drain and rinse under cold water to cool it down quickly and prevent sticking.
Prepare the Ingredients:
While the pasta cools, halve the cherry tomatoes, chop or tear the basil leaves, and dice the mozzarella (or use whole mini mozzarella balls).
Make the Balsamic Glaze:
In a small saucepan over medium heat, combine the balsamic vinegar and honey (or brown sugar).
Bring to a simmer and let it reduce until it thickens slightly, about 5–7 minutes.
Remove from heat and let it cool.
Assemble the Salad:
In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
Drizzle with olive oil and season with salt and pepper.
Toss gently to coat everything evenly.
Add the Balsamic Glaze:
Drizzle the balsamic glaze over the salad just before serving.
Toss lightly to distribute the flavors.
