Ingredients:
For the Pie:
2 (9-inch) pie crusts (store-bought or homemade)
1/3 cup water
2 lbs fresh strawberries, hulled
3/4 cup granulated sugar
2/3 cup cornstarch
Juice and zest of 1/2 lemon
1 teaspoon vanilla extract
A pinch of salt
For the Glaze:
1 cup powdered sugar
2 tablespoons half-and-half
Rainbow nonpareil sprinkles
Directions:
Preheat the Oven: Set your oven to 375°F (190°C) and grease a 9-inch pie plate.
Prepare the Filling: In a saucepan over medium-low heat, combine water, strawberries, sugar, lemon juice and zest, salt, and vanilla extract. Cook until the strawberries soften, about 4–5 minutes. Add cornstarch and continue cooking for 1–2 minutes until the mixture thickens. Remove from heat and let it cool slightly.
Assemble the Pie: Place one pie crust into the prepared pie plate. Pour the warm strawberry filling into the crust. Top with the second crust, trimming any excess dough. Crimp the edges together and cut slits in the top crust to allow steam to escape.
Bake: Bake the pie for 35–45 minutes, or until the crust is golden brown.
Prepare the Glaze: While the pie is baking, whisk together powdered sugar and half-and-half until smooth.
Glaze the Pie: Once the pie has cooled completely, drizzle the glaze over the top. Sprinkle with rainbow nonpareil sprinkles.
Serve: Slice and enjoy your homemade Strawberry Pop-Tart Pie!
