Spinach Artichoke Chicken Bake is a creamy, flavorful, and comforting dish that combines tender chicken breasts with a luscious spinach and artichoke mixture. Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 cup chopped spinach (fresh or frozen, thawed and drained)
1 cup chopped artichoke hearts (canned or jarred, drained)
1/2 cup cream cheese, softened
1/4 cup sour cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon Italian seasoning
Directions:
Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear chicken for 2-3 minutes per side until golden (they will finish cooking in the oven). Remove from heat.
In a bowl, combine spinach, artichoke hearts, cream cheese, sour cream, mozzarella, Parmesan, garlic, and Italian seasoning. Mix well.
Spread the spinach and artichoke mixture evenly over the top of each chicken breast.
Place chicken breasts in a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and the topping is bubbly and golden.
Remove from oven and let rest for a few minutes before serving.
