Ingredients:
1 pound boneless, skinless chicken breasts
1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 small onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup crushed tortilla chips or strips
Optional toppings: shredded cheese, sour cream, avocado slices, chopped cilantro, lime wedges
Directions:
Place chicken breasts in the slow cooker. Add diced tomatoes, black beans, corn, onion, garlic, chicken broth, cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
Remove chicken from the slow cooker and shred using two forks. Return shredded chicken to the pot and stir.
Serve soup topped with crushed tortilla chips and desired toppings like cheese, sour cream, avocado, cilantro, and lime wedges.
