Ingredients:
1 cup strong brewed coffee, cooled
3 tablespoons amaretto liqueur
1 cup mascarpone cheese
1 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
24 ladyfinger cookies
1 cup pitted fresh or jarred cherries, chopped
Cocoa powder, for dusting
Whole cherries, for garnish (optional)
Directions:
In a shallow dish, combine brewed coffee and amaretto. Set aside.
In a mixing bowl, beat mascarpone cheese until smooth.
In a separate bowl, whip heavy cream, sugar, and vanilla extract until stiff peaks form.
Gently fold the whipped cream into the mascarpone until well combined.
Quickly dip each ladyfinger into the coffee-amaretto mixture and arrange a layer in the bottom of a serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Sprinkle half of the chopped cherries over the mascarpone layer.
Repeat with another layer of dipped ladyfingers, mascarpone mixture, and cherries.
Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
