Homemade Pistachio Wedding Cookies are a delightful twist on the classic snowball cookie, offering a buttery, melt-in-your-mouth texture with a subtle pistachio flavor. The addition of pistachio pudding mix not only imparts a gentle nutty taste but also contributes to the cookies' tender crumb. Ingredients:
1¾ cups all-purpose flour
1 (3.4 oz) package instant pistachio pudding mix (dry)
1¼ cups powdered sugar, divided
2 teaspoons vanilla extract
1 cup salted butter, softened
½ cup shelled pistachios, finely chopped
Directions:
Preheat Oven: Set your oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream Butter and Sugar: In a large mixing bowl, beat the softened butter until smooth. Add ½ cup of powdered sugar and the vanilla extract, and continue to beat until the mixture is light and fluffy.
Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and dry pistachio pudding mix.
Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until well combined.
Add Pistachios: Fold in the finely chopped pistachios until evenly distributed throughout the dough.
Form Cookies: Using a teaspoon or cookie scoop, roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
Bake: Bake in the preheated oven for 10–12 minutes, or until the edges of the cookies are lightly golden.
Cool and Coat: Allow the cookies to cool on the baking sheets for about 5 minutes. While still warm, roll each cookie in the remaining ¾ cup of powdered sugar to coat thoroughly.
Store: Once completely cooled, store the cookies in an airtight container at room temperature for up to a week.
