Ingredients:
For the Brownies:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
2 tablespoons lemon zest (about 2 lemons)
1/3 cup fresh lemon juice
1 teaspoon vanilla extract
For the Lemon Glaze:
1 cup powdered sugar
2-3 tablespoons fresh lemon juice
Directions:
Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, mix the melted butter and granulated sugar until smooth.
Add eggs, lemon zest, lemon juice, and vanilla extract; whisk until well combined.
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour batter into the prepared pan and spread evenly.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool completely.
In a small bowl, whisk powdered sugar with lemon juice until smooth to make the glaze. Adjust consistency with more powdered sugar or lemon juice as needed.
Drizzle or spread the lemon glaze over the cooled brownies. Let set before slicing and serving.
