Ingredients:
1 1/2 pounds boneless, skinless chicken breasts or thighs
4 cups low-sodium chicken broth
3 carrots, peeled and sliced
3 celery stalks, sliced
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf
Salt and pepper, to taste
1 cup egg noodles or rice (optional)
Fresh parsley, chopped (for garnish)
Directions:
Place chicken, carrots, celery, onion, and garlic into the crockpot.
Add chicken broth, thyme, parsley, bay leaf, salt, and pepper. Stir to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked and vegetables are tender.
Remove chicken and shred with two forks, then return shredded chicken to the crockpot.
If using egg noodles or rice, add them to the crockpot and cook on high for an additional 20-30 minutes, until tender.
Remove bay leaf before serving. Garnish with fresh parsley.
