For the Chicken Satay:
1 pound boneless, skinless chicken thighs (or breasts)
2 tablespoons soy sauce
1 tablespoon vegetable oil
1 tablespoon oyster sauce
1 tablespoon brown sugar
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
Skewers (wooden or metal)
For the Easy Thai Peanut Sauce:
½ cup creamy peanut butter
3 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 tablespoon fresh lime juice
1 teaspoon red chili flakes (optional)
Warm water (to thin the sauce)
Marinate the Chicken:
In a large bowl, combine soy sauce, vegetable oil, oyster sauce, brown sugar, garlic powder, ground coriander, ground cumin, salt, and black pepper.
Cut the chicken into strips and add it to the marinade. Mix to coat evenly and let it marinate for at least 30 minutes.
Prepare the Peanut Sauce:
In a bowl, whisk together peanut butter, soy sauce, rice vinegar, brown sugar, lime juice, and red chili flakes.
Gradually add warm water until you reach your desired consistency. Set aside.
Preheat the Grill:
Heat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Skewer the Chicken:
Thread marinated chicken strips onto the skewers, leaving some space in between each piece for even cooking.
Grill the Skewers:
Place the skewers on the heated grill and cook for about 15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
