For the Pork:
250 g pork shoulder, sliced ~0.5 cm thick
2 garlic cloves, minced
2 shallots, finely chopped
145 g pineapple, diced
1 pinch chili flakes (or to taste)
20 g coriander (cilantro), chopped
For the Sauce / Marinade:
1 tsp fish sauce
½ Tbsp honey
1 Tbsp ketchup
1 tsp lemon juice
1 Tbsp oyster sauce
1 Tbsp sriracha
¾ tsp black pepper
¼ tsp salt
1 Tbsp sugar
1½ Tbsp tapioca flour (or cornstarch)
~9/16 cup (approx. 140 ml) water or pineapple juice
In a bowl, mix the fish sauce, honey, ketchup, lemon juice, oyster sauce, sriracha, sugar, salt, pepper, tapioca flour, and water until smooth.
Add the pork slices to the sauce and marinate briefly (about 10 minutes).
Heat a small amount of oil over medium-high heat. Sauté garlic, shallots, and chili flakes until fragrant.
Add marinated pork and stir-fry until cooked through and sauce thickens and coats the meat.
