Cowboy Butter Chicken Recipe
Cowboy Butter Chicken is a mouthwatering dish where juicy chicken breasts are smothered in a rich, buttery sauce that is packed with flavors of garlic, herbs, mustard, and a hint of lemon. This dish is perfect for a weeknight dinner or any special occasion, delivering both comfort and a burst of savory goodness.
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika (smoked or sweet)
1 tablespoon olive oil (for searing)
For the Cowboy Butter Sauce:
½ cup unsalted butter (softened)
4 garlic cloves, minced
1 teaspoon Dijon mustard
1 teaspoon red pepper flakes (adjust to taste)
1 tablespoon fresh parsley, chopped (plus extra for garnish)
1 teaspoon fresh dill, chopped (optional but recommended)
Juice of 1 lemon (about 2 tablespoons)
½ cup chicken broth (or water for a lighter option)
½ cup heavy cream
Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt, black pepper, and paprika.
Sear the Chicken: Heat a large skillet over medium-high heat and add olive oil. Once hot, add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
Make the Cowboy Butter Sauce: In the same skillet, reduce the heat to medium and add the softened butter. Once melted, stir in the minced garlic and cook for 1-2 minutes until fragrant. Add the Dijon mustard, red pepper flakes, chopped parsley, and dill (if using), stirring to combine.
Add the Liquids: Pour in the lemon juice, chicken broth, and heavy cream. Stir continuously to create a smooth, creamy sauce. Let the sauce simmer gently for 2-3 minutes to allow the flavors to meld together.
Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, ensuring they are coated with the sauce. Cover the skillet and let the chicken cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
Garnish and Serve: Remove the skillet from the heat. Garnish the chicken with additional chopped parsley before serving.
