1 lb breakfast sausage (pork or turkey)
6 large eggs
1/4 cup whole milk
Salt and pepper to taste
1 cup shredded sharp cheddar cheese
8 flour tortillas (8-inch size)
1 tablespoon butter
In a large skillet, cook the breakfast sausage over medium heat until fully cooked and browned. Remove from the skillet and set aside.
In a medium bowl, whisk together the eggs, milk, salt, and pepper.
