Inspired by the viral baked feta pasta trend, these Baked Feta Potatoes offer a rich and flavorful side dish that's perfect for any occasion. Crispy roasted potatoes are combined with baked feta cheese, roasted garlic, lemon, and fresh basil, creating a harmonious blend of textures and tastes. This one-pan recipe is not only easy to prepare but also delivers a comforting, Mediterranean-inspired meal that's ready in about 45 minutes. Ideal for serving alongside grilled meats, salads, or as a standalone vegetarian dish.
Ingredients:
2 large baking potatoes
1 block (200g) feta cheese
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon red chili flakes
1 head of garlic (top sliced off)
1 lemon, quartered
1 tablespoon honey
¼ cup (20g) fresh basil, chopped
Directions:
Preheat Oven: Set your oven to 200°C (390°F).
Prepare Potatoes: Wash and cube the potatoes. Place them in a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6–8 minutes, then drain and let them steam dry for 2–3 minutes.
Season Potatoes: Transfer the potatoes to a baking dish. Add olive oil, dried thyme, dried oregano, salt, black pepper, and red chili flakes. Toss to coat evenly.
Add Garlic: Place the whole head of garlic (with the top sliced off) among the potatoes.
Roast Potatoes: Roast in the preheated oven for 30–40 minutes, or until the potatoes are golden and crispy.
Add Feta and Lemon: Nestle the block of feta cheese into the center of the potatoes. Squeeze over the juice of half the lemon.
Continue Roasting: Remove the garlic from the dish. Return the dish to the oven and roast for an additional 15 minutes.
Prepare Garlic Mixture: Once the garlic is cool enough to handle, squeeze the roasted garlic cloves out of their skins and mash them.
Combine Ingredients: In a bowl, mix the mashed garlic with the juice of the remaining half of the lemon and honey. Pour this mixture over the roasted potatoes.
Finish and Serve: Add the chopped fresh basil to the dish. Gently toss to combine, ensuring the potatoes are well-coated. Serve warm and enjoy!
