Slow Cooker Beef and Noodles is a comforting and hearty meal perfect for busy days when you want a warm, satisfying dinner with minimal effort. Tender beef slow-cooked to perfection pairs beautifully with soft egg noodles and a rich, flavorful gravy. This classic dish is easy to prepare and makes for delicious leftovers, ideal for family dinners or gatherings.
Ingredients:
2 pounds beef chuck roast, cut into large chunks
1 large onion, sliced
3 cloves garlic, minced
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
8 ounces egg noodles
2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Directions:
Place beef chunks, onion, and garlic into the slow cooker.
Pour in beef broth and Worcestershire sauce. Add thyme, rosemary, salt, and pepper.
Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
Remove beef from slow cooker and shred or slice as desired.
Cook egg noodles separately according to package instructions; drain and set aside.
If desired, stir cornstarch slurry into the slow cooker liquid to thicken the gravy. Cook on high for an additional 10-15 minutes until thickened.
Return shredded beef to the gravy and stir to combine.
Serve beef and gravy over cooked egg noodles. Garnish with fresh parsley.
