8 oz pasta (whole wheat or gluten-free)
4 cups fresh arugula
1 cup cherry tomatoes, halved
2 tbsp freshly squeezed lemon juice
3 tbsp extra virgin olive oil
½ cup grated Parmesan cheese
Salt and pepper, to taste
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
Prepare the Dressing: In a small bowl or jar, combine the lemon juice, olive oil, salt, and pepper. Whisk or shake until well-blended.
Assemble the Salad: In a large mixing bowl, combine the cooked pasta, arugula, halved cherry tomatoes, and grated Parmesan cheese.
Dress the Salad: Pour the prepared dressing over the salad and toss gently until all ingredients are evenly coated.
Serve: Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
