Ingredients:
For the Crust:
2 cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
For the Cream Cheese Layer:
16 ounces cream cheese, softened
1 cup powdered sugar
2 cups heavy whipping cream, whipped
For the Jello Layers:
3 (3-ounce) packages berry-flavored gelatin (strawberry, raspberry, or mixed berry)
3 cups boiling water
3 cups cold water
2 cups fresh mixed berries (strawberries, blueberries, raspberries), chopped
Directions:
Prepare the Crust:
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9x13-inch dish. Refrigerate while preparing the other layers.
Make the Cream Cheese Layer:
Beat softened cream cheese and powdered sugar until smooth. Gently fold in the whipped cream until well combined. Set aside.
Prepare the Jello:
Dissolve each package of gelatin in 1 cup boiling water. Stir well until completely dissolved. Add 1 cup cold water to each and refrigerate until slightly thickened but not fully set (about 30-45 minutes).
Assemble the Layers:
Pour one layer of slightly thickened gelatin over the crust. Add a layer of cream cheese mixture over the gelatin. Sprinkle some chopped fresh berries on top. Repeat the layers, alternating gelatin, cream cheese mixture, and berries until all ingredients are used, finishing with a gelatin layer.
Chill:
Refrigerate the assembled lasagna for at least 4 hours or until fully set.
Serve:
Cut into squares and serve chilled.
