Baked Feta Eggs are a simple yet flavorful breakfast or brunch dish that combines creamy feta cheese with eggs for a rich, savory experience. The feta bakes until it’s soft and slightly golden, infusing the eggs with its tangy, salty flavor. Easy to prepare and customizable with your favorite herbs or vegetables, this dish is perfect for a comforting start to the day.
Ingredients:
2 large eggs
4 ounces feta cheese, crumbled
1 tablespoon olive oil
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
Salt and pepper, to taste
Fresh parsley or chives, chopped (for garnish)
1/4 cup cherry tomatoes, halved (optional, for added flavor)
Directions:
Preheat your oven to 375°F (190°C).
Drizzle olive oil into a small oven-safe dish or ramekin. Place the crumbled feta cheese in the dish, spreading it out evenly.
Crack the eggs directly over the feta cheese, being careful not to break the yolks.
Sprinkle the eggs with oregano, garlic powder, salt, and pepper.
Optional: Add halved cherry tomatoes around the eggs for extra flavor and color.
Bake for 10-12 minutes, or until the egg whites are set and the yolks are still soft. If you prefer firmer yolks, bake for a few extra minutes.
Garnish with fresh parsley or chives and serve immediately with toast or pita bread.
