Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
For the Lime Mousse Filling:
16 ounces cream cheese, softened
1 cup powdered sugar
1/2 cup fresh lime juice
Zest of 2 limes
2 teaspoons unflavored gelatin powder
1/4 cup cold water
1 1/2 cups heavy whipping cream
Directions:
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing filling.
In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. Heat gently until gelatin dissolves completely; set aside to cool slightly.
In a large bowl, beat cream cheese and powdered sugar until smooth and creamy.
