Ingredients:
1 large cucumber, peeled and thinly sliced
½ small red onion, thinly sliced
¼ cup fresh cilantro, chopped
¼ cup roasted peanuts, chopped
½ teaspoon salt
¼ cup rice vinegar
2 tablespoons sugar
1 tablespoon water
1 tablespoon Thai sweet chili sauce
1 tablespoon apple cider vinegar
Directions:
Place the thinly sliced cucumbers in a colander and sprinkle with salt. Let them sit for 10–15 minutes to draw out excess moisture.
In a small bowl, whisk together rice vinegar, sugar, water, Thai sweet chili sauce, and apple cider vinegar until the sugar dissolves.
After the cucumbers have rested, rinse them under cold water and pat dry with paper towels.
In a large bowl, combine the cucumbers, red onion, and cilantro. Pour the dressing over the mixture and toss gently to combine.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, sprinkle the chopped peanuts on top for added crunch.
