Ingredients:
1 pound ground beef
12 ounces pasta (penne, rotini, or your choice)
1 packet ranch seasoning mix
1 1/2 cups beef broth
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons olive oil
1 tablespoon butter
Salt and pepper, to taste
Directions:
Heat olive oil and butter in a large pot over medium heat. Add ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
Add the ranch seasoning mix to the beef and stir to combine.
Pour in the beef broth and bring to a simmer. Add the pasta, making sure it’s fully covered with the liquid.
Cover and cook according to the pasta package instructions, usually about 10-12 minutes, stirring occasionally to prevent sticking.
Once the pasta is cooked and the liquid is mostly absorbed, stir in the shredded cheddar cheese and sour cream until the cheese is melted and the sauce is creamy.
Season with salt and pepper to taste.
Serve hot, garnished with additional cheese or fresh herbs if desired.
