1 pound (about 4) boneless, skinless chicken breasts
1/4 cup Dijon mustard
2 tablespoons whole grain Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon soy sauce (or tamari for gluten-free)
2 cloves garlic, minced
Salt and pepper, to taste
1/2 cup chicken broth (or water)
2-3 sprigs fresh rosemary
Preheat your oven to 350°F (180°C).
In a bowl, whisk together the Dijon mustard, whole grain Dijon mustard, honey, apple cider vinegar, soy sauce, minced garlic, salt, pepper, and chicken broth until well combined.
Place the chicken breasts in a single layer in a baking dish.
Pour the honey Dijon mixture over the chicken, ensuring each piece is well-coated.
Tuck the rosemary sprigs around the chicken in the baking dish.
Bake in the preheated oven for 25–35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
For a moister chicken with more sauce, cover the pan while baking. For a darker, more golden brown color and thicker sauce, bake uncovered.
Remove from the oven and let the chicken rest for a few minutes before serving.
Serve the chicken with the pan sauce spooned over the top.
