Ingredients:
8 slices white bread, crusts removed
1 pound breakfast sausage, cooked and crumbled
4 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 tablespoons butter
Maple syrup, for serving
Directions:
Using a rolling pin, flatten each slice of bread until thin and pliable.
Place a spoonful of cooked sausage on one end of each flattened bread slice. Roll up tightly and set aside.
In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
Heat butter in a large skillet over medium heat.
Dip each roll-up in the egg mixture, coating all sides, then place in the skillet.
Cook roll-ups for 2-3 minutes per side, or until golden brown and cooked through.
Remove from skillet and serve warm with maple syrup.
